Saffron Garlic Aioli

Nice mayonnaise for use on hamburgers and other sandwiches to add wonderful flavors.
Ingredients -
½ teaspoon Saffron Thread
1 tablespoon Warm Water
2 Egg Yolks
1 Garlic clove, crushed
pinch of Salt
1 tablespoon Lemon Juice or White Wine Vinegar
1/3 cup Olive Oil
2/3 cup Vegetable Oil
Fresh Ground Black Pepper
 
Preparation:

1. In a small bowl, combine saffron and warm water.

2. In separate bowl, whisk egg yolks, salt, lemon juice.

3. Combine olive oil and vegetable oil.

4. Add oil very gradually to egg mixture while constantly whisking.

5. Stir in saffron mixture.

6. Season with salt and pepper.

You could substitute canola oil for the vegetable or cooking oil.
