Crockpot Barbecue Beef Short Ribs

Delicious beef short ribs prepared slow cooked in the crockpot, perfect for a backyard gathering or for packing up and eating at an outdoor picnic.
Ingredients -
3 1/2 pounds Beef Short Ribs
1 tablespoon Vegetable Oil
1 large Onion, cut into wedges
4 medium Potatoes, peeled
4 medium Carrots; pared, cut up
1 cup Water
1 cup Tomato Ketchup
1/3 cup Red Wine Vinegar
1 tablespoon Paprika
1 teaspoon Curry Powder
1/2 teaspoon Chili Powder
1/2 teaspoon Dry Mustard
2 teaspoons Salt
 
Preparation:

1. Add vegetable oil to large skillet. Brown ribs over medium heat.

2. Transfer ribs to crockpot.

3. Place potatoes, onion and carrots on top of ribs.

4. In a small bowl, combine water, ketchup, vinegar, paprika, curry powder, chili powder, dry mustard, and salt.

5. Pour over vegetables.

6. Cover crockpot and cook on LOW 8 to 10 hours.

Crockpot
Cooking time can often be shortened by cooking on higher heat, but is not recommended with this barbecue beef rib recipe.

Title
Always pack plenty of paper towels, and damp cleaning wipes for dirty hands. Place moistened washcloths and dry towels in zip lock plastic bags for transport to and from picnic locations.
