Beer Can Roasted Chicken

Whole chicken grilled and seasoned with dry rub featuring chili powder, cumin, salt, sugar, cayenne pepper, and white pepper.
Ingredients -
2 teaspoon Chili Powder
1 teaspoon Ground Cumin
1 teaspoon Salt
1/2 teaspoon Sugar
1/4 teaspoon Cayenne Pepper
1/4 teaspoon White Pepper
1 Whole Chicken
1 (12 ounces) can Beer
 
Preparation:

1. In small bowl, combine chili powder, ground cumin, salt, sugar, cayenne pepper, and white pepper.

2. Rub over outside, in cavity, and under skin over breasts and legs.

3. Cover chicken in foil and refrigerate.

4. Preheat grill to medium heat.

5. Pour 2/3-cup beer into foil pan. Make 2 more holes in top of beer can.

6. Push top of beer can with the holes into chicken cavity, taking care not to spill the beer.

7. Place foil pan on bottom grate.

8. Arrange chicken on top grate, standing upright on beer can.

9. Place chicken on beer can upright in roasting pan on the upper rack.

10. Cover grill, cook 70 minutes, or until done.

11. Remove chicken from grill or oven. Allow chicken to rest 5 minutes.
