Barbecued Wild Duck

Wild ducks roasted in the oven and glazed with a homemade barbecue sauce.
Ingredients -
2 Wild Ducks, thoroughly cleaned and ready for cooking, (1 pound each), split in half
1/4 cup Butter
1/2 cup Ketchup
1/2 cup chopped Onion
1 Garlic clove, minced
5 teaspoons Lemon Juice
1 tablespoon Brown Sugar
1 tablespoon Worcestershire Sauce
1 teaspoon Salt
1/2 teaspoon Hot Pepper Sauce
 
Preparation:

1. Preheat oven to 350 F.

2. Place ducks in large baking dish or roasting pan.

3. Cover and bake 2 hours, or until tender.

4. Meanwhile, in medium saucepan, combine butter, ketchup, chopped onion, minced garlic, lemon juice, brown sugar, Worcestershire sauce, salt and hot sauce.

5. Bring to a gentle boil over medium high heat. Reduce heat to low.

6. Reduce heat, cover and simmer for 5 minutes.

7. Baste ducks with barbecue sauce during last 30 minutes of cooking time.

Always store any lighter fluids or other flammables well away from the heat of the fire.

Marinades For Basting
Never use an uncooked marinade for basting. Boil marinades gently for 2 to 3 minutes to kill bacteria.
