Barbecue Simmered Chicken Chunks

Quick, sauteed chicken breast pieces flavored with raspberry jelly. Perfect for backyard parties or for cooking in advance and packing to go.
Ingredients -
4 Boneless, Skinless Chicken Breasts, cut into bite-size chunks
Vegetable Oil Spray
1/4 cup Barbecue Sauce
1/4 cup Raspberry Reduced-Sugar Jam
 
Preparation:

1. Spray large skillet with vegetable oil spray.

2. Heat over medium heat until hot.

3. Add chicken to skillet.

4. Saute 3-4 minutes, stirring occasionally.

5. Chicken should no longer be pink in center.

6. Stir in barbecue sauce and raspberry jam.

7. Cook additional 3 minutes.
